Penang Assam Laksa - Taking the World by Storm

This Penang Assam Laksa recipe serves 4 hungry people


Ingredients:


• 600 g cooked laksa noodles (thich rice vermicelli)

• 450 g flaked mackerel (or if you can't mackerel, substitute with another oily fish)

• 1 onion, finely sliced

• 1/2 cucumber, finely sliced

• 2 red chilies, finely sliced

• 1/4 pineapple, finely sliced

• 1 piece ginger bud

• several mint leaves

• 1 packet of Khimyan's Penang Assam Laksa Paste



Instructions:
1.Boil the water in a pot. Pour the contents of the packet of Khimyan’s Penang Assam Laksa Paste into the pot. Stir well.

2. Place the mackerel flakes into the pot.

3. Separate the 600 g of cooked laksa noodles into 4 bowls.

4. Pour the hot broth into each bowl.

5. Garnish with the onion, cucumber, red chilies, pineapple, ginger bud and mint leaves.

6. Serve immediately.

Suggestions: To really add another layer of bliss to this wonderful dish, you can use heh ko as a condiment. Heh Ko is a dark, thick sauce of sugar, sweet soy sauce and shrimp paste – it is a common condiment in hawker dishes around Malaysia. Many Malaysians will agree that heh ko is a must-have for a true Penang Assam Laksa experience.
